Goat Cheese & Salami Ball
16 ounces of soft plain goat cheese
2 ounces of minced salami
1 cup fresh minced parsley
2 whole, minced scallions
1 teaspoon of sea salt
1 teaspoon garlic powder
½ teaspoon black pepper
1 tablespoon mixed poultry seasoning
Place goat cheese in a food processor and pulse until it is soft and creamy.
Add 2 tablespoons of minced salami and 2 tablespoons of minced parsley and scallion and pulse together.
Add sea salt, garlic powder, black pepper, and poultry seasonings and pulse until well combined.
With your hands, form a large ball, gently patting on the remaining salami, parsley and scallion, and place on a platter.
Arrange dipping veggies, extra salami, and cheese, or low-carb chips around the goat cheese.
Keep chilled in the fridge until ready to serve.
